How to smoke a small brisket, supermarket brisket is a tough meat to smoke. 

They generally are tiny, flat and very lean. I see so many people asking on BBQ groups and forums how to smoke a small cheap brisket.

So here’s how I do it.

As with all my recipes I run through the selection, preparation, seasoning, BBQ set up, times and temps, so you can recreate this recipe at home.

Preparation Time: 1 hour

Cook Time: 5 hours

Cook Temp: 150c (300f)

Cook to internal Temp : 96c (206f) but go by tenderness when probing

Rest Time: 15 minutes to steam off

Hold Time: 1 hour Cuisine: American / Australian

Hydration: 10 x beers
